This pot still whiskey from Boann distillery in County Meath has an inviting palate of warm spices, wildflower honey, candied citrus and golden sultanas. This complex profile was achieved through initial maturation in Kentucky bourbon barrels, followed by further ageing in French oak marsala butts from Cantine de Vinci. A great example of Irish pot still whiskey made with oats, rye and both malted and un-malted barley.
Nose: An evocative nose with subtle spices backed by resinous bark and burnt orange aromas, with notes of freshly cut grass and floral honey.
Palate: A rich and viscous mouthfeel with sweet marmalade on entry, superseded by peppermint and oak spices.
Finish: A prolonged finish imparted with delightful notes of cinnamon and clove.

Boann Madeira cask finish

Boann’s rich and chewy pot still whiskey – made with oats, rye, green barley and malted barley – shows fantastically finished in Madeira casks from legendary producer Justino. The underlying spirit is soft and textural with characteristic pot still orchard fruits and spices which meld perfectly with the rich dried fruit notes and bright acidity of the Madeira.
Nose: A vibrant nose with enticing aromas of apples and peaches, followed by wonderful honey notes and a toasted oak spice, with a touch of floral fragrances playing nicely in the background.
Palate: A velvety smooth mouthfeel with peaches and cream on entry, overlaid with vanilla, walnuts, dried fruit cake and a delicate minerality throughout.
Finish: A long and crisp finish with fresh lemon oil and a lingering savoury spice. A tropical Atlantic Island voyage!

Boann PX Cask Finish

In addition to reviving old-fashioned styles of Irish pot still whiskey, Boann distillery has committed to sourcing top-quality casks from around the world to mature its spirits. This particular expression was finished in Pedro Ximenez casks from Bodegas Garvey in Jerez. The use of these bodega sherry butts – made from both oak and chestnut wood – has layered this whiskey with notes of sticky dried fruits, aromatic spices, dark chocolate and cured meats.
Nose: A decadent nose bursting with aromas of raisins and figs, beautifully backed by molasses, sweet caramel, and a touch of leather.
Palate: A sweet and savoury palate with a wonderful mixture of honey syrup, fine dark chocolate, crispy bacon and cracked white pepper.
Finish: Long and rich, with earthy caramel flavours that stay with you long after you’ve finished.
